rock’s post: tomato soup

We got a package in the mail from my sister yesterday; the very first package she has ever sent me… What a nice surprise!  Turned out to be an engagement gift of 2 cookbooks, one for doughnuts, and one from my favourite comfort food joint in Vancouver, Burgoo.  I loooove the tomato soup from Burgoo and so of course I decided that we had to try and make it ASAP.  And what a pleasant surprise when I got home from work today as Rock went grocery shopping for once and had this soup simmering away on the stove already.  A big bowl of tomato soup along with some grilled cheese sandwiches made with a sliced up baguette and a melty mix of cheeses and dinner is served.  Anyway, since Rock is the one who made the soup, here is his post about it:

This is a very simple recipe for a fabulous, tasty soup.  You will need:

1 can (190z) diced tomatoes with juice  /  2 cups of water  /  200 ml of red wine  (I used petit Siraz because I love that wine!)  /  4 large ripe tomatoes chopped  /  1 medium red onion chopped  /  3 garlic cloves chopped  /  1/2 can of tomatoes paste  /  1  and 1/2 tbsp of brown sugar  /  1 and 1/2 tbsp of balsamic vinegar  /  a dash of extra virgin olive oil and a dash for presentation  /  salt and pepper to taste

In a large pot, bring all the ingredient to boil.  Reduce the heat and let the amazing concoction simmers for a hour.  Remove from the heat, let cold down for few minutes and, with a hand blender, blend and the ingredients together until smooth.  Serve hot with a drizzle of olive oil on top !!!  Voila !! trop facile…  I had some fresh ground pepper and it was  very delicious, you can taste the wine but just enough… Everything is good with wine. The grilled cheese was a great side!

  1. That looks wonderful! I just made Soupe à l’oignon, and am looking for other soup ideas to combat the unseasonably cold weather. I suppose it’s the winter equivalent of making lemonade. 🙂
