a better chicken caesar salad with avocado dressing

So I got my hands on some McDonalds coupons last week and I have been working my way through them like nobody’s business (if you don’t know me, I have an extreme weakness for fast food; it’s horrible).  Tonight I decided I had to make something healthy if not for my own then at least for Rock’s sake.  I like caesar salad but sometimes the raw eggs in the dressing disagrees with me and it’s pretty much the opposite of healthy.  But tonight I made a caesar salad with an avocado-based instead of oil-and-egg yolks-based caesar dressing and it worked out amazing!  You have to try this.

For the avocado caesar dressing: 1 ripe avocado  /  2 anchovy fillets (which you can oddly find in the cheese section of Safeway)  /  1-2 cloves of garlic (just depends on how stinky you wanna be after)  /  1 lemon  /  a couple splashes of worcestershire sauce  /  4 tbsp of fat-free plain yogurt

For the rest of the salad:  2 chicken breasts  /  a couple dashes of chipotle chilli powder  /  a couple dashes of oregano  /  salt and pepper  /  1 and a half romaine hearts  /   shredded parmesan cheese  /  olive oil  /  a few good sprigs of cilantro  /  a handful of cherry or grape tomatoes  /  ~ 1/3 cucumber  (sliced)  /  croutons

Season the chicken breasts with the chilli powder, oregano and some salt and pepper.  Then either pan fry it with a bit of olive oil or grill it; we dusted off our ol’ George Foreman grill for this.  In the meantime, make up the dressing.  Using a magic bullet or a blender, combine the avocado, anchovies, garlic, lemon, yogurt, worcestershire sauce, a few splashes of olive oil, cilantro, and a couple heaping tablespoons of parmesan until it’s all smooth.  Season the dressing with some salt and pepper, keeping in mind that the anchovies and parmesan add some saltiness already.  Chop up your romaine and toss into a salad bowl along with some sliced up cucumber, the cherry tomatoes, and the dressing (just use as much as you prefer).  Dish up the salad and then slice up the chicken and place on top along with a small handful of croutons and a sprinkling of parmesan.

This salad turned out so rad I am so excited about it.  A caesar salad that’s not worse for you than a cheeseburger, imagine that!    Rock really liked it too and liked that it’s super easy and quick to whip up.  I think he also likes that it’s not a McChicken that he has to eat just because I have a buy one get one free coupon.
