garlic-fest: tzatziki

It’s not -50C anymore so clearly it’s barbecue time!  Our friends Hank and Katharina had a barbecue at their place over the weekend, the first one of the year (!!) and we made souvlaki and tzaziki to bring over.  I’ll blog about souvlaki another time but here’s my super easy recipe for a nice garlicky tzatziki.

1 tub (500g) of fat free greek yogurt  /  1 cucumber  /  2-4 cloves of garlic (use as little or as much as you like but both Rock and I like a lot of garlic!)  /  salt and pepper

Using a box grater, shred the cucumber.  Salt the cucumber and set it aside for 10 minutes or so for the salt to draw the liquid out of the cucumber. Then squeeze as much liquid out of the cucumber as you can;  you don’t want a watery tzatziki.  Mince the garlic or put the cloves through a press.  If you have a cheesecloth, strain the yogurt through and you will get a richer and thicker consistency.  I didn’t have a cheesecloth on hand this time but even without straining, the tzatziki will turn out well so don’t stress if you don’t have one!  Then just combine everything together and season with salt and pepper to taste.  Yummy to eat with souvlaki or pita bread; enjoy!
