Warning: This makes 3 dozen cookies !
Today is our friend Kelly’s big moving day !!! We will contribute with oatmeal cookies. These cookies really taste like holiday. I can see my self eating a cookie by the fire place with a cup of warm coffee… and i’m very sure Santa Claus himself will want one of these cookie by the chimney during Christmas night.
You will need:
5 cups quick-cooking oats / 3 cups all-purpose flour / 1 tsp salt / 1 tbsp baking powder, 1 block (454 g) of room temperature unsalted butter / 3 cups brown sugar / 1 tbsp ground cinnamon / 1 tbsp vanilla extract / 2 large eggs
Pre heat the oven to 350F; if you have a convection fan, turn it on.
In a big bowl, combine the oats, flour, baking powder and the salt. Mix the dry elements together.
In the stand mixer’s bowl, set the butter, brown sugar, cinnamon and vanilla extract. Mix together until you get an even dough. Add two eggs and get mixing until smooth and thick. I added about 2 cup of the dry elements into the sweet mix. You will see, it become very thick very quick, so a toss the sweet mix into the dry elements and I mix with my hands until the everything is well together. It will be very thick.
I used a 1/4 cup measuring cup to form small balls, I actually made 39 of them…
I set the balls on a non sticky baking mats (or you can use parchment paper) and I pressed them down to form a nice cookie shape. Smooth the edges, they tend to break.
Bake them for 15 minutes. They will be very soft when you pulled them out of the oven but, when cool down, they are just perfect.
I made them for the first time the other night when my pregnant fiancee wanted cookies… So they are very easy to do, fast made and a guaranteed success !
