taco salad

This isn’t so much a recipe as it is a meal idea. I wanted to eat tacos but I wanted to lighten it up a bit by making a taco salad instead .  Kinda like when you’ve already eaten too many tacos but you want to eat more so you throw some taco stuff on a pile of lettuce and convince yourself this doesn’t count as another taco ‘cus there’s no shell… I can’t be the only one who’s done this.

I’ve made this numerous times and it’s really filling, will satisfy any taco cravings you may have, and you can feel proud of yourself for eating a salad.  Healthy is balanced with a bit of trashy by the addition of Doritos. I use Doritos because: taco in a bag.  I had never even heard of taco in a bag until I moved to Moose Jaw. If you’re not in the know like I was, it’s taco ingredients dumped into a personal size bag of Doritos. Turns out it’s delicious.

Anyway, like I said this isn’t so much a recipe so feel free to use whatever amount of the ingredients you want. It’s also good with avocado and cherry tomatoes.

This will make 2-3 large meal size salads.

500g lean ground beef or lean ground turkey*  /  ~2 tbsp taco seasoning  /  2 hearts of romaine  /  1/2 red pepper  /  a few stalks of green onion  /  cheddar cheese, grated  /  greek yogurt or sour cream  /  Catalina salad dressing  /  Doritos chips

*This is more meat than you need but since most packages seem to come in ~500g, it’s just easier


Brown your ground beef in a skillet over medium-high heat and then add the taco seasoning and 1/3 cup of water.  Cook, giving it a stir every now and then, until all the liquid is gone.  In the meantime, chop up your romaine, slice up the green onion and dice the red pepper.

On each person’s plate, pile up some romaine and drizzle over some salad dressing.  Then top with red pepper, green onion, taco beef, and a (generous if you’re like me) sprinkling of cheese.  Spoon some yogurt or sour cream onto the side and for the finishing touch, crush a handful of Doritos over top.
